In an attempt to get my eating on track (again), I am back to menu planning. The last month or so, I wasn’t in any sort of routine, and since Jason has been home as he is taking the summer off from school, a lot of dinners were eaten out, or picked up on the way home from work. But my pants be getting tight, yo’, and that’s never a fun feeling, so it’s time to suck it up and get back in the kitchen on Sunday afternoons to whip up several meals for the week. In all honesty, just a few hours is all it takes – and then I have the rest of the week set up for success. Plus, then I’m not texting Jason on my way home with, “but what do you want for dinnnner?” to which he always replies, “whatever you want.” To then I reply, “I don’t know what I am in the mood for, just pick something!!”, and he does and then I tell him I don’t want whatever it is he suggests. He really can’t win with me. In our case maybe menu planning also saves lives
marriages, my friends.
Since it is just Jason and I at Casa de Crews, most of the dinners we make are also lunch for the next day. I call meals like that a win in my book.
Monday: Almost 5 Ingredient Pizza Spaghetti Pie. I am obsessed with this casserole from PaleOMG. Jason can’t get enough either. I do add fresh mozzarella to mine though (which is not paleo). The flavor is ah-mazing.
Tuesday: Dinner with friends.
Wednesday: Turkey Taco Lettuce Wraps.
Thursday: Grilled Beef Burgers, bunless, with a Caesar salad (making my own Caesar dressing).
Friday: Dinner with friends, and it’s FRIDAY!
Breakfast is almost always a variation of egg muffins. This week I added mushrooms to my mix, with sausage, spinach, and cheese.
