Happy, Happy FRI-YAY! I love this time of year with all my heart. It’s still hotter than Hades in Florida, but we pretend with all our fall foods, and events. The next several weeks in Tampa Bay, you’ll find many an Oktoberfest (the legit Oktoberfest in Germany ends this weekend, but it seems to last throughout October in the U.S.)
I have a super small confession to make: I’m not a huge craft beer drinker. I know, I know…then why do I love Oktoberfests so much? I honestly don’t know. I also love playing trivia with my friends at local breweries in the area, and rarely love the brews, or the price tag.
It’s all about atmosphere. I do usually find 1-2 beers I like, but it’s generally at the expense of my wallet, after trying several other beers, until I find the winner.
Last week for example, one of my sisters and I went to dinner at a local brewery, and I asked for a cider (generally a safe choice for me), but the only cider available was Crispin, and I really dislike their cider (sorry, Crispin…clearly we won’t be working together, any time soon). It’s just tastes watered down to me. So my server suggested a raspberry ale…and I love the Sea Dog Raspberry Wheat, and I was quite excited. Turns out the Framboise Raspberry is so not my fave, annnnnd it was $11. Whoops.
So I decided to do the next best thing this year; I picked up a six-pack of mix and match brews to try at home. I invited friends over to “celebrate” with me over Beer Cheese Dip. I’m just sad I didn’t think of this sooner, you guys.
This Beer Cheese Dip is insanely easy to make, it’s super cheesy, thick and OMG, I WANT THE WHOLE BOWL. With just four ingredients (five, technically. I don’t usually count spices as an ingredient), this cheesy dip is less processed than most cheese dips you’ll find.
It is super tasty with homemade pretzel bites (I used this recipe), apples, carrots, basically anything you can think of to dip into a warm vat of cheese, yo’. Throw it in a mini crock pot should you feel so inclined and rate your favorite beers with friends! - 2 tbsp butter
- 2 garlic cloves, minced
- 2 tbs arrowroot powder (or cornstarch)
- 12 oz beer of choice
- 16 oz sharp cheddar block, shredded
- In a medium saucepan, over medium heat, add butter. Once melted, add minced garlic cloves and saute 1-2 minutes. Whisk in arrowroot (or cornstarch) until a roux is formed (texture will be pasty).
- Pour in 12 oz beer, and half of cheese; whisk together.
- Slowly add in remaining cheese, and mix well until smooth, and melty.
- Serve immediately, or transfer to a mini crockpot.
