Happy Monday! This weekend was a busy, and gluttonous one – Jason and I were free of nephew duties; we had made a ton of plans, weeks before we agreed to start helping out.
Saturday, we had tickets to the Oddball Comedy Fest, headlined by Amy Schumer, and Aziz Asnari. The show was hilarious. My only gripe: info online said “laughs started at 5:15pm”…but the show didn’t start until 7pm, so we were way early.
Before the show, Jason took me to Mel’s Hot Dogs (we’re so classy). I’d never been to Mel’s, but it’s pretty much an institution in Tampa, with its history, especially if you attended USF (I did not). I opted for a Bratwurst with sauerkraut, and Jason had an Italian sausage, and we each ordered as a basket (fries and coleslaw)…but since we went initially planning to order an actual hot dog, we also ordered a snack dog to share. Each bun is steamed, and I can’t tell you what a tasty difference that makes. In the end, it was wayyyy too much food. Next time (oh yes, there will be a next time!), one basket to share is more than enough! Tampa friends, have you been to Mel’s?
Sunday, we had tickets to the Tampa Bay Buccaneers game – it rained, and rained…and rained. Then the sun came out for maybe twenty minutes, and somehow even with all the rain, and after applying sunscreen, I have a sunburn. It makes no sense. We lost (womp) and soothed our loss, with dinner to-go. We were both exhausted and I was in bed by 9pm. Haha.
It was clearly a gluttonous weekend. But I also ran both mornings, and a weekend without any real responsibility was just what both Jason and I needed.
To get back on track, we’re eating lots of salad this week:
Monday: Grilled Chicken Salad with Homemade Caesar Dressing from Well Plated.
+ I love homemade Caesar dressing! I make this Paleo version, often, but am intrigued by Erin’s recipe to use Greek yogurt.
Tuesday: Shredded Buffalo Chicken Salad by Casa de Crews (me. duh)
+ I make this salad about once a month. It’s quick, easy, and a little chicken goes a long way! I prepped these on Sunday, while we were at the Bucs game. So easy.
Wednesday: Beef Chili with Cocoa Powder from the HSN blog.
+ I made this chili a month ago for the HSN blog, and we have a ton leftover. Jason eats pretty much low-carb, all the time, and since this has beans (if you are doing low-carb and want a tasty chili recipe, just omit the beans from this recipe), the leftovers are all mine. I have 5-6 servings left. This is such an easy dinner to defrost, and works well on nights Jason has class. Hello, dinner for one!
Thursday: Home opener for the Tampa Bay Lightning! We’ll probably grab dinner on the way.
Friday: Roasted Chicken with a side of Roasted Brussels Sprouts and Bacon from Nom Nom Paleo
+ I’ll be picking up nephew from after-school care, so Jason is in charge of dinner. We’re used to eating out on Fridays, but I don’t want our nephew to think that’s the norm, so we’re having chicken. I have no idea if our six year old buddy will eat this side (I personally cannot get enough!), so I plan to have something else for him.
