I told Jason last week I wanted us to do more ‘summer’ things while he was on break. We’ve spent the majority of his summer break together working on the house, hosting my best friend’s engagement party, and just going through life in general. He only has a few weeks left (three, I think) and I want to take advantage of this time, while we can.
…So we went on a picnic! When we first started dating, Jason would pack a small cooler, and we’d go to a park nearby, after work. It wasn’t anything fancy, but it was thoughtful on his end, and a great way to wind down together, as the sun set.
This time, I planned the picnic with a few simple dishes, that could be made ahead of time. I love making homemade hummus. It is so flavorful, and you can add whatever extra ingredients you want to make it your own (like avocado -yum!). So I opted to add Greek-inspired toppings; are you even surprised? My love for Greek food knows no bounds.
cooler basket included sandwiches made with French baguettes, homemade hummus, diced watermelon (for some sweetness), and of course wine. The Woodbridge by Robert Mondavi stackable wines I found, were perfect for our impromptu picnic. They’re just the right size for easy transport, and make so much more sense than trying to pack a normal sized bottle, cork, and glasses, for drinking. We were able to enjoy quality wine, with little effort. They really made our little picnic perfect!
I love Woodbridge by Robert Mondavi Chardonnay in the summer, as it was chilled all day (and it was hot out!), but Jason is a fan of reds, and so I made sure to pack Woodbridge by Robert Mondavi Cabernet Sauvignon, as well.
Making a homemade hummus is insanely easy, but if you’re pressed for time, feel free to buy a container of pre-made, and add your favorite Greek-inspired toppings for added flavor. And of course, don’t forget the wine!
It may have taken us the majority of summer to get here, but I think we’ve finally figured out how to enjoy it while it lasts…
- 2 cups drained canned chickpeas, reserve some of the liquid for later
- 1/2 cup tahini paste
- 1/4 cup extra-virgin olive oil
- 2 cloves garlic, peeled
- 1 tbsp paprika
- juice of 1 lemon
- Salt and freshly ground black pepper to taste
- 1/4 cup cucumber, diced
- 2 tbsp diced roasted red peppers
- 2 tbsp chopped Kalamata olives
- 2-3 tbsp crumbled feta cheese
- Pita chips, crackers, veggies for serving
- To a food processer, add all ingredients, except chickpea water. Pulse until smooth.
- If hummus is too thick, gradually add chickpea water to slightly thin.
- Add salt, and pepper, adjusting to taste.
- To a small bowl, mix all ingredients. Add to top of hummus for garnish. Dig in!
