Have you noticed my lack of posts this month on the blog? Life has been BUSY. We were in audit season at work, so I have been traveling a ton. The Food Wine Conference is this weekend, and as one of the main coordinator, there are a lot of moving parts. Annnnd if that wasn’t enough, Jason and I are currently sharing a car.
To say my eating (well, my whole life really) has been sporadic is an understatement. I have had zero time for proper meal planning, and right now I need easy. I love making my own sauces, and dressings when time permits, but at the moment, I have no time. This busy season is coming to an end, and I’m ready for a recharge, but in the meantime, I need all the help I can get so that we’re eating well (and not out! ha).
Enter: Barilla Ready Pasta. These microwaveable pouches of pasta, are perfect for me right now. I only need to heat for 60 seconds before digging in. Last week, it was 3pm, and I realized I hadn’t eaten lunch. So I quickly heated a bag of Gemelli, and mixed in a few tablespoons of Marinara Sauce, and called it a day. These new Barilla Ready Pastas give me al dente pasta in a minute. A MINUTE. Also, I love to cook my pasta al dente when time permits, but sometimes I get distracted and overcook, so having pasta ready on it’s own in no time is a game changer.
As nice as it is to have a quick lunch like my Gemelli/Marinara combo, that will get old real quick for me if I eat it everyday. And even though I’m whining to you about how busy I am (I know, I know. I’m sorry.) I can allot twenty minutes to make dinner every now and again at Casa de Crews.
My favorite protein to prepare when I am pressed for time is shrimp. I tend to buy it frozen in bulk, and thaw as needed. Shrimp takes 3-4 minutes to cook! We’re pretty much living off shrimp at the moment.
I like to toss cooked shrimp, fresh asparagus, pesto sauce, and Barilla Ready Pasta in a skillet, and call it dinner. Seriously, it’s ready in not even 20 minutes, you guys. Healthy, fresh, and simple. Literally, what I need in my life right now.
- 8 ounces shrimp
- 2 tbsp olive oil
- 1 garlic clove, minced
- ½ cup (about 4-5 stalks) asparagus, diced
- ½ cup pesto sauce
- 1 pouch Barilla Ready Pasta (Rotini suggested)
- To a medium skillet, add olive oil over medium heat. Once hot, add garlic and saute until fragrant, about 1-2 minutes. Add shrimp to skillet and cook until no longer pink, about 2-3 minutes.
- In the 2-3 minutes shrimp is cooking, microwave Barilla Ready Pasta to package directions.
- Add asparagus to skillet with shrimp and stir together, about 1-2 minutes. Add in pasta, and pesto. Combine all ingredients and dig in!
