Over the weekend, we celebrated Friendsgiving with well, our friends. It was a great day, and my heart was super full, as was my belly! We’d always wanted to host a Thanksgiving dinner with friends, but thanks to law school, it was always just an idea.
Though law school or not, we have hosted my in-laws for Thanksgiving the Sunday before, every year since we were married (until this year). So regardless, Jason and I have always had a ton of Thanksgiving leftovers to power through before we even get to Thanksgiving. Our life is so hard, I know.
Honestly, my favorite way to use up leftover Thanksgiving eats is just to make a bowl of leftover goodness. But after a day of eating a bowl loaded full of leftovers, and I get kind of bored. Leftover sandwiches are also fun (and always remind me of the Friends episode with Ross and the moist maker), but then I feel injured from eating said sandwich.
So this year, I used up some of our Thanksgiving leftovers to make TACOS! They’re like a sandwich in that, you can stuff yo’ leftovers into a vessel, but instead of bread, we’re using a tortilla. Leftover Thanksgiving Tacos are totally customizable. Truthfully, if you just wanted to make turkey tacos with Tex-Mex flair, there’s nothing wrong with that.
For these leftover Thanksgiving Tacos, I used up leftover turkey (duh), Brussels Sprouts Salad, stuffing, and a sweet potato. There’s always a rogue sweet potato that didn’t make it into the dish, that’s just hanging out in the produce bowl, isn’t there? Dice it up for good measure, add to these tacos. A generous dollop of leftover cranberry sauce doesn’t hurt either.
The ‘recipe’ for these Leftover Thanksgiving Tacos are totally customizable, so add what you have on hand, and enjoy. Happy Thanksgiving, friends! xo
- 6-8 flour tortillas
- Leftover turkey shredded or chopped into pieces
- Leftover cranberry sauce
- Leftover stuffing
- Leftover sweet potatoes (mashed, or diced)
- Leftover Brussels, shaved
- any other leftovers you desire
- Warm tortillas according to package directions.
- Once tortillas are all warm and toasted, fill with leftovers in any order you like.
- Dig right in!
