Almond Bread Pork Chops

crispy on the outside, and tender on the inside, these almond breaded pork chops are low in carbs, but BIG in nutty, comforting flavors.
  • 16 oz, Center Cut Boneless Pork Chops (4 chops)
  • 1 cup blanched almond meal
  • 2 eggs, whisked
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 4 tbsp Parmesan cheese, grated (omit if Paleo/W30)
  • ½ tbsp Kosher salt
  • ½ tbsp black pepper
  1. Preheat oven to 350 F.
  2. To a plate, add almond meal. Add other spices, and Parmesan cheese, and mix well.
  3. Whisk two eggs, and add to a bowl (use a bowl large enough to for pork chops).
  4. Dip each pork chop into egg wash, and coat in almond meal mixture.
  5. Add each pork chop to a parchment lined baking sheet, with cooking. Cook for 30 minutes, flipping half-way through.
