Watermelon Salad with Mint and Feta Cheese

  • 2 large cucumbers, spiralized, or cubed into ½-inch pieces
  • 3 cups watermelon, balled or cubed into ½-inch pieces
  • ⅓ cup feta cheese, crumbled
  • ¼ cup fresh mint leaves, sliced thin
  • Juice of 1 fresh lime
  1. To a large serving bowl, place cucumber noodles (or cubes), watermelon, feta cheese, and sliced mint.
  2. Squeeze fresh lime juice over the salad.
