Oh hi. I am in fact, still alive. Work has been busy! Weekends with nephew have been…even busier. My free time to blog has been non-existent. But we’re starting to get into a groove on weekends with nephew. It’s definitely a work in progress. He’s kind of a needy kid (as I imagine most six year olds can be), and so all my weekend activities (friends, meal-planning, blogging, etc.) are out of whack.
My eating has been horrible. I didn’t just come off a successful Whole 30 to ruin it with the stress and chaos of our current situation. Soooo, back to diligently meal planning. As long as I let nephew push the cart at the grocery, he is okay to go with me. I realize it sounds like we’re spoiling the kid. I promise we’re not. It’s just a transition, and I know things will get better soon! Dear Lord, they have to.
So…what are we eating this week? Some tasty meals, for sho’! Since it’s Jason and I during the week, these dinners mostly double as lunch the next day #holla.

Monday: Paleo Spaghetti Squash Pizza Casserole from PaleoOMG.
+ I love this dish! I realize I no longer actually follow this recipe at all, since I add ricotta, and other ingredients, but this was the recipe that it inspired it all. It is SO good.
Tuesday: Parmesan Crusted Chicken from yours truly.
+ This is a quick dinner, and I love pairing with a spicy arugula salad!
Wednesday: Slow cooker Kalua Pig from Nom Nom Paleo.
+ This recipe has so many insanely positive reviews. I haven’t had it yet, but I’m quite excited about it! I plan to freeze half of the pork since it calls for a 5lb roast. I’m pairing it with homemade coleslaw.
Thursday: Lemon and Garlic Tilapia from Shruti’s Dilectable Dilites.
+ Tilapia is another quickie dinner, and I love me some lemon and garlic. I’m adding a side of roasted broccoli. BOOM.
Friday: NO NEPHEW FOR THE WEEKEND. We’re going to the USF Bulls game with friends, and will probably grab a Publix Sub on the way #heaven
