This salad is my new favorite summer go-to. I love the fresh taste, and flavors. Also, I think it’s apparent I love Greek food {Greek Fritatta, Greek Pizza, and my general love for the cuisine, here}.
I meant to share this for a Sunday Supper recipe about no-bake summer dishes. I made this over the fourth of July, and even though my mom made her famous Potato Salad, and my Italian Pasta Salad, I still made my family try my Greek Orzo, as well. I had to make sure everyone enjoyed it before I could share the recipe…and then, I forgot to share the actual recipe. Whoops.
The vinaigrette I use for this dish, is the same one I use to marinate chicken breast for salads. It’s very similar to the one for my Italian Pasta Salad, but I add fresh lemon juice as well. Our new home already has a growing lemon tree. I can’t wait to use them up!
Mom took the copious amounts of leftovers to her co-workers and they all asked for the recipe. I will definitely call this one a WIN.
This could easily be a meal on it’s own. Add shredded chicken, or go meatless on a Monday. I promise, it really is that tasty!
