I love to create savory dishes in the kitchen. But tell me I need to precisley measure dry ingredients in one bowl, and wet ingredients in another, and I tend to break out in hives. Baking is not my thang, you guys.
But I was recently sent two products to try in the mail. That meant I had to overcome my baking fears and get to work. Good thing I did too, because I was featured on ABC Action News here in Tampa, yesterday to discuss these Red Velvet Cupcakes for Valentine’s Day!
I had not worked with gluten-free flour in the past, but when I saw the volume was equal to normal wheat flour, I figured it couldn’t be too hard to bake with, right? Turns out, it was very simple!
I’m not a gluten intolerant individual, but I know a lot of friends who have issues with gluten, and I loved looking at the variety of ingredients on this site. I try and eat clean and am currently on my second Whole 30, and while that means I can’t actually enjoy the cupcakes I created, a lot of the products from Authentic Foods had many other products I can use both on my W30 and off, that I felt good about. P.S. I also really liked the resealable bag my flour came in. #ThingsIneverthoughtIdsay?
I was also sent a Cupcake Kit from Mastrad, which was convenient because my idea of frosting a cupcake is using a butter knife and hoping for the best. The Cupcake Kit came with 8 silicone baking cups, a pastry bag for frosting with several tips, and a mini cookbook – which was where I found the recipe for my Red Velvet Cupcakes. I just used gluten-free flour where the recipe called for flour, typically meaning wheat flour, of course.
From someone who would never deem herself a baker, I can tell you making these gluten-free cupcakes was insanely easy!
I think they’d be perfect for you to make for your Valentine this weekend. Or your co-workers, a neighbor, or yo’ self, because really unless you’re also on a Whole 30 (why do I do these things to myself?), why don’t you also deserve a sweet treat for Valentine’s Day, as well?!
Red Velvet Cupcakes {Gluten Free}
Makes 30
Ingredients:
Cupcakes
2 1/2 cups GF flour – I used this brand
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
2 cups granulated sugar
4 eggs
1 cup sour cream
1/2 cup milk – I used 2%
1 oz red food color
2 teaspoons pure vanilla extract
Cream Cheese Frosting
1 8oz package cream cheese, softened
1/4 cup (1/2 stick) butter unsalted, softened
2 tablespoons sour cream
2 teaspoons pure vanilla extract
1 16 oz bag confectioners’ sugar
Directions:
- Preheat oven to 350°F. For the cupcakes, mix flour, cocoa powder, baking soda and salt. Set aside. Beat butter and granulated sugar in large bowl with electric mixer on medium speed 5 minutes or until light and fluffy. Beat in eggs, 1 at a time. Mix in sour cream, milk, food coloring and vanilla. Gradually beat in flour mixture on low speed until just blended. Do not overbeat. Spoon batter into 30 paper-lined muffin cups, filling each cup 2/3 full.
- Bake 20 minutes or until toothpick inserted into cupcake comes out clean. Cool in pans on wire rack 5 minutes. Remove from pans; cool completely. <— didn’t do this the first time. Please let cool.
- For the Frosting, beat cream cheese, butter, sour cream and vanilla in large bowl until light and fluffy. Gradually beat in confectioners’ sugar until smooth.
- Spread top of cupcakes with frosting. Enjoy!
