Happy Father’s Day! Today’s Sunday Supper theme is all about “man food” to honor the guys in our life. My dad is one of the best there is. But dad is an incredibly picky eater, which somehow my mom can handle, but drives me nutty when I try and plan a family dinner. So unfortunately for my father, today’s recipe was made to honor my own baby daddy; the best fur-dad around, my husband.

I’m lucky that Jason will try anything I make at least once. I asked him what his favorite man food was via email {we were both at work when I asked}, and he replied, “I like that shredded chicken you make. But also that shredded taco meat for salads. I know salad doesn’t sound manly, but supporting your wife is, so make sure to include that in your recipe post.” I love that guy.
That shredded taco meat Jason was referring to was beef barbacoa. This dish is so versatile, you can use it for anything! I often make it over salad, because it’s easy and I can make a huge batch to last all week.
I originally adapted my recipe from Joyful Healthy Eats, but have made it a little more paleo friendly with ground chipotle peppers, instead of canned {no added sugar that way}, and used shoulder roast instead of brisket. I also make a paste out of the spices for better coverage + flavor.
Feel free to throw your beef barbacoa in a taco, burrito bowl, or anything else you can think of. Sometimes, I just eat it with a spoon, and avocado ranch dressing. #classy

I can totally relate to a picky eater dad – my father-in-law is pretty picky (complete opposite of my dad who will eat anything). I love that you made this for your furbaby dad (that photo of your sweet dog is adorable! Those eyes!). This looks delicious. And I’d be totally down with eating this with a spoon and avo ranch dress so yeah, I’m #classy too 😉

How funny, we had something very similar (Cafe Rio Style) at my dad’s tonight. I’m not a huge fan cuz it’s slow cooked in Coke but your recipe looks perfect! Love chipotle (I contributed chipotle black beans 😉
