I’m generally the type of girl who needs some sort of meaty protein on her salads. A meal isn’t complete without it! Except for some reason, when it comes to fruity salads, with leafy greens. I mean don’t get me wrong, I can always add some chicken, but there is something so refreshing to me this time of year, to enjoy a light salad.
This Spring Mix Salad is my latest obsession, you guys. Crisp greens, creamy avocado (how I love thee), tart goat cheese, fresh Florida blueberries, and a Grapefruit Poppy Seed Vinaigrette. Even if you’re not a grapefruit fan, I think you’ll love this dressing. It adds jusssst a small tang to this sweet ensalada.

Ingredients
Grapefruit Poppy Seed Vinaigrette
- ¼ Cup Raw Honey
- ¼ Cup Rice Wine Vinegar
- ½ Cup Olive Oil
- 1 tablespoon Poppy Seeds
- 1 teaspoon Dry Mustard
- 1 tablespoon Grapefruit Juice - fresh grapefruit suggested
- 1/2 teaspoon Onion Powder
- Salt & Pepper - to taste
Salad
- 4 cups spring mix salad mix - any leafy greens will work
- 1 cup blueberries
- 1 avocado - pitted and diced
- 4 ounces goat cheese - softened
- walnuts or almonds - optional
Instructions
Grapefruit Poppy Seed Vinaigrette
- To a mason jar, add all ingredients. Secure lid, and mix well. Refrigerate until ready to serve.
Salad
- Plate spring mix. To each plate, top with ¼ cup blueberries, ¼ avocado, 1-ounce goat cheese. Garnish with nuts, if desired. Toss with dressing. Enjoy!
