I’m turning thirty-two next week (why? how? I digress), and since my birthday always starts off the new year (I was born on January 2nd, in case you want to buy me something pretty) I feel like I reflect extra hard. Sadly, as I get older (why? how?), I can only eat poorly for a meal or two before I feel sluggish, and I just can’t hang like I used to. I never thought that statement would also pertain to food. But here we are.
I ate, I drank, and you guys I was more than merry this holiday season. It’s time to get things back on track, folks.
When they’re in season, one of my favorite ingredients to incorporate in to pretty much everything is a fresh Florida Strawberry. Whenever I have tried to “diet” in the past, I knew I could eat lots of strawberries for little calories, and carbs (Phase 2 of the Atkins Diet was always my favorite, because I could once again have strawberries). Each time I start a round of the Whole 30, I look forward to strawberries as a side to breakfast, or thrown into a salad. They’re Paleo approved too. Plus, I mean we grow them in FLORIDA! You can pick them yourself on strawberry farms. And, we have the Florida Strawberry Festival each year in Plant City (where my in-laws hail from). You know how I feel about supporting anything local – not that it’s difficult, when it’s local produce I love so much.
These days, I just aim to eat clean most of the time (this past week does not count!). It’s easy to make my own dressings, sauces, etc and store them in a mason jar for the week (tip: wash and dice your strawberries, and store in a mason jar, and they’ll stay fresh for up to five days!) to grab and go.
I love making a batch of Strawberry Poppy Seed Chicken Salad on Sunday to eat through the week. Homemade mayo (use store bought if you like), mixed with a poppy seed dressing using honey, shredded chicken and Florida Strawberries. Hello! It’s so good. Sometimes I eat this salad as is. Other times I throw it in a lettuce wrap, or on a piece of toasted bread. Even though it’s still December, I plan to serve this salad with croissants at a friend’s baby shower I am hosting in February. No matter your dietary preference, or party menu, this salad is perfect for everyone.
