Two refreshing twists on this classic mojito recipe; shake with fresh pineapple juice, and top with sparkling, bubbly prosecco for an elevated cocktail!
To a glass, add mint leaves, honey, and rum. Muddle them together (pound with a muddler or the handle of a wooden spoon) to allow mint flavor to release.
Pour the pineapple juice over the muddled mixture. Stir well.
Add ice to fill the glass.
Pour Riondo Prosecco over the ice. Add a straw and sip!
