bone-in pork chops

teaspoon
Kosher salt
1
teaspoon
ground black pepper
2
tablespoons
avocado oil

¼
cup
Pistachio Pesto
-
or any pesto
Instructions
Rub pork chops (both sides) with avocado oil, salt and pepper. Cover and allow to sit at room temperature for 20 minutes.
Oil the grate of a grill and set to medium heat (can also use a grill pan indoors).
Add pork chops and grill for 20 minutes, flipping halfway through. Temperature should be 145°F -160°F degrees, depending on preference.
Remove from heat, and top with
Pistachio Pesto
.
