Watermelon Feta Salad with Cucumber and Mint

Fresh, flavorful, and filling! This salad is the perfect summer side, under 100 calories. Paleo, and Whole 30 compliant if cheese is omitted.

Ingredients

  • 2 large cucumbers, spiralized, or cubed into ½-inch pieces
  • 3 cups watermelon, balled or cubed into ½-inch pieces
  • cup feta cheese, crumbled
  • ¼ cup fresh mint leaves, sliced thin
  • Juice of 1 fresh lime

Instructions

  • To a large serving bowl, place cucumber noodles (or cubes), watermelon, feta cheese, and sliced mint. Toss to combine.
  • Squeeze fresh lime juice over the salad. Serve immediately.
