Ingredients

  • 6 ounces bacon, diced (no sugar bacon, nitrate free)
  • 1 small yellow onion, finely chopped
  • 1 large apple, diced into 1-inch cubes
  • 1 teaspoon cinnamon
  • 2 tablespoons coconut oil, or ghee
  • 1 large sweet potato, peeled and diced into 1-inch cubes
  • 1 tablespoon fresh sage, minced - can use dried
  • 1 teaspoon thyme, dried or fresh

Instructions

  • In a medium skillet over medium heat, cook diced bacon 3-5 minutes, until crispy. Remove bacon, but leave fat in pan.
  • Add diced onion, chopped apples, and cinnamon. Cook until soft, about 5-7 minutes. Once soft, remove from pan and add to reserved bacon. Set aside.
  • Add coconut oil or ghee to pan. Once melted, add sweet potatoes and cook for 2 minutes. Stir, and cook 2 more minutes.
  • Continue cooking sweet potatoes, stirring as needed, allowing all sides to brown and not burn, until soft, about 5-6 more minutes (about 10 minutes total)
  • Add reserved bacon, onion, and apples back to pan. Add sage and thyme, stir to combine and warm throughout.
