Burrata Caprese Salad

Ingredients
1/2
pint
cherry or grape tomatoes, halved
1/4
cup
red onion, diced
2
tablespoons
fresh basil, torn
1
tablespoon
extra-virgin olive oil
1
tablespoon
balsamic vinegar
1
ball
fresh burrata
-
usually comes as a 4oz ball
salt and pepper, to taste
Instructions
To a medium sized bowl, mix tomatoes, onion, fresh basil, olive oil, salt and pepper. Refrigerate 1 hour for flavors to marry.
When ready to serve, place burrata in center of serving dish. Plate caprese mix around burrata. Drizzle balsamic over plate. Serve immediately.
