  • 1/2 cup shallot - diced
  • 1/4 cup fresh basil
  • 2 tbsp balsamic vinegar
  • 1 tbsp extra-virgin olive oil
  • 4 slices fresh mozzarella cheese
  • 1 to mato - sliced into 1/2 inch thick rounds
  • 1/4 cup pesto sauce - homemade, store bought, etc
