In a medium skillet over medium heat, cook diced bacon 3-5 minutes, until crispy. Remove bacon, but leave fat in pan.
Add diced onion, chopped apples, and cinnamon. Cook until soft, about 5-7 minutes. Once soft, remove from pan and add to reserved bacon. Set aside.
Add coconut oil or ghee to pan. Once melted, add sweet potatoes and cook for 2 minutes. Stir, and cook 2 more minutes.
Continue cooking sweet potatoes, stirring as needed, allowing all sides to brown and not burn, until soft, about 5-6 more minutes (about 10 minutes total)
Add reserved bacon, onion, and apples back to pan. Add sage and thyme, stir to combine and warm throughout.
