In a small saucepan, heat water, sugar, chopped celery and celery salt over medium-high heat. Bring mixture to a boil and stir until the sugar dissolves.
Remove from heat, cover and steep for 30 minutes. Remove celery and strain salt (optional step to strain) and store in the refrigerator until ready to use. Can be made ahead of time.
Celery Salty Dog
Wet each glass with water or by rubbing a lime wedge around the rim of each of glass, and dip it into salt.
Fill each glass with ice. Add 1.5 ounces gin or vodka to each glass (about a jigger full). Divide grapefruit juice equally between glasses (about 2 ounces), stir in 1 tablespoon of Celery Simple Syrup. Stir to combine and sip responsibly!
Notes
Celery Simple Syrup can be made in advance and stored in the refrigerator, up to 2-weeks.
