breakfast parfait with greek yogurt, chia seeds and papaya

A fresh and easy breakfast parfait made with Greek yogurt, chia seeds, and juicy papaya. This no-cook recipe is perfect for busy mornings and comes together in minutes.

Ingredients

  • 1/4 cup chia seeds
  • 1 cup almond milk, unsweetened - can also use oat milk or coconut milk
  • 1 1/2 tablespoons honey or maple syrup - optional
  • 1 cup plain Greek yogurt
  • 1/2 Super Starr Papaya, cubed
  • 3/4 cup granola of choice

Instructions

  • Make the chia seed pudding: To a bowl or large mason jar, add chia seeds, almond milk and honey. Stir well to combine. Cover and refrigerate 2 hours, up to overnight until the chia seeds have absorbed all of the liquid.
  • Assemble the parfaits: layer a glass or jar with 1/2 of the prepared chia seed pudding, 1/4 cup Greek yogurt, granola, 1/4 serving of the cubed papaya. Then add one more layer of Greek yogurt, and top with granola and papaya. Repeat for second parfait.

Notes

this will make 2 breakfast sized portions, or you can make 4 smaller portions for an afternoon snack. nutrition info is for 2 servings with 3/4 cup granola, divided.
The prep time to assemble these parfaits is 15 minutes. You will want to allow 2 hours, up to overnight to make the chia seed pudding.
