Ingredients

Buffalo Shredded Chicken

  • cup cayenne hot sauce - such as Frank’s or Crystal
  • 1 tbsp tbsp unsalted butter, melted - or ghee
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp pepper
  • 2 cups shredded chicken (about 1lb) - such as crockpot shredded chicken, rotisserie chicken, leftover turkey or chopped chicken thighs

Celery Slaw

  • 1 ½ cups Dandy® Celery, sliced on a bias - about 4-5 ribs celery
  • 1/4 cup mayonnaise
  • 1/4 cup greek yogurt or sour cream
  • ½ tbsp each fresh parsley, dill and chives, finely chopped - or 1/2 teaspoon each dried spice
  • Juice from ½ fresh lemon - or a generous splash of apple cider vinegar
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp pepper

Instructions

Shredded Buffalo Chicken

  • To a bowl, mix hot sauce, melted butter and dried spices. Whisk to combine. Fold in shredded chicken until coated in hot sauce mixture.

Celery Slaw

  • To a bowl, add mayo, Greek yogurt, fresh herbs and lemon juice. Whisk to combine. Fold in sliced celery until fully coated in dressing.

Mashed Potato Bowls

  • Layer each bowl with about ½ cup mashed potatoes, followed by 4-ounces of shredded buffalo chicken. Top with a generous scoop of celery slaw. Garnish with 2 tbsp of crumbled blue cheese and serve.

Notes

Cook time: is assuming you've got prepped mashed potatoes and shredded chicken. Time will vary depending on how you prepare. Celery slaw can be made 1-2 days ahead of time.
