10ouncesgreens of choice - romaine, butter lettuce, kale, etc
1lbchicken breast, grilled and chopped - leftover chicken or rotisserie will also work for this
2medium pears, sliced thin
2medium apples, cubed
½cupcrumbled blue cheese - or gorgonzola or feta
½cupwalnut pieces - or pecans or slivered almonds
apple cider vinaigrette dressing
Apple Cider Vinaigrette Dressing
¼cupolive oil
4tablespoonsapple cider vinegar
2teaspoonshoney - or maple syrup
1tablespoonDijon mustard
½tablespoongarlic powder
1teaspoonsalt
1teaspoonblack pepper
Instructions
Salad
To a large mixing bowl, add lettuce, diced pears, chopped apples, chopped chicken, walnut pieces and blue cheese crumbles. Toss to combine and mix with apple cider vinaigrette.
Apple Cider Vinaigrette Dressing
To a mason jar, or small bowl whisk together all ingredients. Refrigerate until ready to toss over salads.
