- Preheat air fryer to 375℉. 
- Scrub and dry Russet potatoes. Slice into 1/3-inch thick sticks.  
- Add sliced potato sticks to a large mixing bowl and cover with cold water. Soak for 15-30 minutes, up to overnight if needed for advance prep. 
- Rinse and drain potatoes and pat dry. 
- Toss potatoes in oil or cooking spray and toss to combine with salt, pepper, garlic powder and paprika. 
- Place the potatoes in the air fryer basket in a single layer so that the potatoes are not touching. You may have to work in batches depending on the size of your basket. Air fry at 375℉ for 15 to 20 minutes, flipping halfway, or until crispy*
