Preheat air fryer to 375℉.
Scrub and dry Russet potatoes. Slice into 1/3-inch thick sticks.
Add sliced potato sticks to a large mixing bowl and cover with cold water. Soak for 15-30 minutes, up to overnight if needed for advance prep.
Rinse and drain potatoes and pat dry.
Toss potatoes in oil or cooking spray and toss to combine with salt, pepper, garlic powder and paprika.
Place the potatoes in the air fryer basket in a single layer so that the potatoes are not touching. You may have to work in batches depending on the size of your basket. Air fry at 375℉ for 15 to 20 minutes, flipping halfway, or until crispy*
