  • 1 (12-count) package Jimmy Dean® Fully Cooked Links
  • 3 cups shredded hash browns - make sure to thaw if using frozen
  • 1 cup baby bella or button mushrooms, chopped
  • 6 ounces shredded cheddar cheese, divided
  • 8 large eggs, whisked
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup fresh herbs, chopped such as scallions, parsley, or chives - optional garnish

  • Preheat oven to 400 degrees F. Spray a 9x12 baking dish with nonstick cooking spray.
  • Arrange Jimmy Dean® Fully Cooked Links in an even layer in bottom of baking dish. Spread 3 cups hash browns evenly on top. Sprinkle with 3-ounces shredded cheese followed by mushrooms.
  • Whisk eggs, garlic powder, onion powder, salt and pepper in bowl. Pour in eggs; gently shake baking dish to ensure eggs are evenly distributed.
  • Cover with foil that's been sprayed with nonstick spray and bake for 40 minutes. Remove foil and continue baking for 5-10 minutes or until cheese and eggs are a golden brown. Remove from oven and top with remaining cheese and fresh herbs, if using. Let sit for 10 minutes before slicing and serving.


If making in advance, bake for 40 minutes at 400 degrees F. Remove from oven and allow to cool completely before refrigerating. When ready to reheat, remove casserole from refrigerator and allow to come to room temperature. When ready, bake for 10 minutes at 400 degrees F. Remove and garnish with 3-ounces cheddar cheese and fresh herbs.
