This Cheesy Sausage and Mushroom Casserole are what breakfast dreams are made of. But seriously! It’s layered with Jimmy Dean® Fully Cooked Links, shredded hash browns, fresh mushrooms and cheddar cheese; baked with whisked eggs, making for one fluffy and hearty breakfast casserole that’s perfect for a weekend brunch.
This egg casserole is pretty straight-forward, which makes it easy to shop for; I can get everything I need from Publix to make this breakfast bake in one shot. And hi, hello. Did I mention how easy this was to make?
Breakfast casseroles like this are the best for a family brunch at home, and depending on everyone’s appetites, this casserole is even better the next day reheated as leftovers!

Making this cheesy sausage and mushroom casserole couldn’t be easier. You just layer and bake.
- Jimmy Dean Fully Cooked Links: fully cooked sausage links help make this breakfast easy. With the perfect blend of seasonings, these sausage links will make breakfast the best meal of the day.
- Shredded hash browns: If using frozen hash browns, make sure to thaw ahead of time, or you can simply grate 2 Russet potatoes.
- Fresh baby bella or button mushrooms: if the family doesn’t like mushrooms, you can omit these or sub in another veggie, such as spinach or bell peppers.
- Shredded cheddar cheese: need we say more?
- Eggs: 8 whisked eggs, seasoned with pantry spices, help complete this casserole.
- Fresh herbs: after baking, I love to garnish this casserole with fresh scallions and parsley. Chives would also taste delicious!

How to make this breakfast casserole in advance
Prepping this dish ahead of time could not be simpler. It’s as easy as grabbing everything you need from Publix (you can find your Jimmy Dean Fully Cooked Links near the meat case with bacon and hot dogs) and par-baking at home.
This recipe calls to bake for 50-55 minutes before serving, but if you want to make it ahead of time, you certainly can.
To make this casserole in advance: simply layer all of the ingredients, and bake for 40 minutes. You’ll remove it from the oven and allow to cool before refrigerating. Then, when you’re ready to serve, remove from the refrigerator and allow it to come to room temperature, and bake for 10 minutes until warmed through.
Top with cheese and fresh herbs, and dig in! Everyone will love it.
How to reheat leftovers
There’s no need to turn the oven on to reheat these casserole leftovers. I like to use a skillet and quickly warm it up on medium-high heat for 4-5 minutes.
You can also use a toaster oven or microwave for 1 minute.

Cheesy Sausage and Mushroom Breakfast Casserole
Ingredients
- 1 (12-count) package Jimmy Dean® Fully Cooked Links
- 3 cups shredded hash browns - make sure to thaw if using frozen
- 1 cup baby bella or button mushrooms, chopped
- 6 ounces shredded cheddar cheese, divided
- 8 large eggs, whisked
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup fresh herbs, chopped such as scallions, parsley, or chives - optional garnish
- cooking spray
Instructions
- Preheat oven to 400 degrees F. Spray a 9x12 baking dish with nonstick cooking spray.
- Arrange Jimmy Dean® Fully Cooked Links in an even layer in bottom of baking dish. Spread 3 cups hash browns evenly on top. Sprinkle with 3-ounces shredded cheese followed by mushrooms.
- Whisk eggs, garlic powder, onion powder, salt and pepper in bowl. Pour in eggs; gently shake baking dish to ensure eggs are evenly distributed.
- Cover with foil that's been sprayed with nonstick spray and bake for 40 minutes. Remove foil and continue baking for 5-10 minutes or until cheese and eggs are a golden brown. Remove from oven and top with remaining cheese and fresh herbs, if using. Let sit for 10 minutes before slicing and serving.
