You know my love for Buffalo Chicken knows no bounds. I love making a batch of my Buffalo shredded chicken for easy meal prep! It’s so easy to toss in a salad or stuff into a sweet potato with ranch, or as potato skins for a game-day bite!
But my newest obsession takes it to a whole new level: spicy buffalo chicken piled high over creamy mashed potatoes and finished with the tangiest, crunchiest celery slaw. It’s cozy comfort in a bowl…with a serious kick.

This loaded mashed potato bowl is naturally gluten-free with its creamy mashed potato base, lean buffalo chicken, and crunchy, fresh celery slaw. Here’s what goes into each layer:
- Shredded Buffalo Chicken: I like to make a batch in the crockpot for easy meal prep, but you can totally use rotisserie chicken, chopped chicken thighs, or even leftover turkey in a pinch.
- Celery Slaw: Dandy® celery is perfect here; naturally sweet, extra crunchy, and the best texture boost for these bowls.
- Mashed Potatoes: I usually go with my Instant Pot mashed potatoes, but any mashed potato recipe you love will work. Store-bought mashed potatoes are also great if you need dinner fast.
- Blue Cheese Crumbles: a salty, tangy pop of flavor! If blue cheese feels too strong, shredded cheddar works just as well – like a proper loaded mashed potato bowl. You can also skip the cheese entirely if you’re dairy-free.


What You Need to make Celery Slaw
Like any good slaw, the magic is in the dressing. This one uses a mix of mayo and Greek yogurt to keep it creamy and light, but you can go all-mayo if you want to keep things dairy-free. Fresh herbs brighten everything up, though dried will work in a pinch. Full measurements are in the recipe card.
- Dandy® Celery: about 4 ribs, thinly sliced
- Mayonnaise & Greek Yogurt: the creamy base
- Fresh Herbs: parsley, dill, and chives
- Lemon Juice: to thin the dressing and add that zippy flavor
- Spices: garlic powder, onion powder, salt, and pepper

Ingredients
Buffalo Shredded Chicken
- ⅓ cup cayenne hot sauce - such as Frank’s or Crystal
- 1 tbsp tbsp unsalted butter, melted - or ghee
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp pepper
- 2 cups shredded chicken (about 1lb) - such as crockpot shredded chicken, rotisserie chicken, leftover turkey or chopped chicken thighs
Celery Slaw
- 1 ½ cups Dandy® Celery, sliced on a bias - about 4-5 ribs celery
- 1/4 cup mayonnaise
- 1/4 cup greek yogurt or sour cream
- ½ tbsp each fresh parsley, dill and chives, finely chopped - or 1/2 teaspoon each dried spice
- Juice from ½ fresh lemon – or a generous splash of apple cider vinegar
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp pepper
Mashed Potato Bowls
- 2 cups mashed potatoes - your favorite homemade recipe or store bought for ease!
- Celery Slaw
- 2 cups Buffalo Shredded Chicken
- ½ cup blue cheese crumbles
Instructions
Shredded Buffalo Chicken
- To a bowl, mix hot sauce, melted butter and dried spices. Whisk to combine. Fold in shredded chicken until coated in hot sauce mixture.
Celery Slaw
- To a bowl, add mayo, Greek yogurt, fresh herbs and lemon juice. Whisk to combine. Fold in sliced celery until fully coated in dressing.
Mashed Potato Bowls
- Layer each bowl with about ½ cup mashed potatoes, followed by 4-ounces of shredded buffalo chicken. Top with a generous scoop of celery slaw. Garnish with 2 tbsp of crumbled blue cheese and serve.
