Ground Chicken Basil Stir-Fry

Ground chicken, fresh basil, and jalapeño come together in this easy 30-minute stir-fry for busy weeknights.

Ingredients

  • 1 tablespoon olive oil - or avocado oil
  • 1 lb ground chicken - can use ground turkey as well
  • 2 cloves garlic, minced
  • 1 jalapeno, seeds and ribs removed, diced
  • 2 teaspoons coconut aminos - or soy sauce or tamari
  • 1/2 tablespoon honey
  • handful of fresh thai basil - or regular basil
  • green onions, for garnish - optional

Instructions

  • To a skillet, on medium heat, add oil. Once hot, add ground chicken and brown until no longer pink, breaking up using a spatula, about 5-6 minutes.
  • add in minced garlic and diced jalapeno. Saute until fragrant, about 1-2 minutes. Add coconut aminos and sauté together. Then add honey and allow to caramelize slightly, 2-3 minutes. Then stir everything together.
  • Add in a handful of fresh basil and sauté the skillet together. The basil will begin to wilt even as you remove from heat.
  • Serve in a lettuce wrap, over rice or your favorite bowl - enjoy!

Notes

You'll notice there isn't any added salt or pepper in this recipe. I find there's plenty of flavor as written. Of course, taste is personal, so feel free to season to taste at the end. I'd start with ½ teaspoon each of kosher salt and black pepper and adjust from there.
