Spicy, sweet, and filling, healthy Thai chicken with fresh basil and jalapeno is loaded into a hearty lettuce wrap to keep carbs low.
Thai food is new to me. I don’t have much experience with it, but what I have had, I love. Especially Thai Basil Chicken; a small bit of heat, some sweetness, and chicken. I mean, what isn’t to love, right?
Plus, I just love any excuse to make lettuce wraps. Keep this low carb as is, or toss in your favorite grain (white rice, brown rice, quinoa, etc) if you like. Sometimes, I’ll omit the lettuce and add the chicken mix to a bit of brown rice – but not today….because that would be cheating 😉
Thai Basil Chicken Lettuce Wraps
Ingredients
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 lb ground chicken
- 1 jalapeno, seeds and ribs removed, diced
- 2 teaspoons coconut aminos - or soy sauce or tamari
- 1 tablespoon honey - optional
- handful of fresh thai basil - or regular basil
- 8 lettuce leaves of choice - bibb, butter, iceberg, etc
Instructions
- To a skillet, on medium heat, add oil. Once hot, add garlic and saute 1-2 minutes. Add grown chicken, jalapeno, coconut aminos, and honey - if using. Mix well.
- Cook chicken mixture no longer pink, breaking up using a spatula, about 8-10 minutes. Remove from heat. Add in a handful of fresh basil leaves, and cook until wilted. Remove from heat.
- Spoon mixture into lettuce cups when ready to eat.
