Ingredients

Whipped Feta

  • 8 ounces block feta cheese, in brine
  • 3-4 tbsp extra-virgin olive oil
  • fresh lemon juice, from ½ fresh lemon
  • 1/4 cup Greek yogurt - 2% suggested
  • 2 cloves garlic, minced

Greek Turkey Burgers

  • 1 lb ground turkey - Look for 93% lean ground turkey. If you can find 90/10, that’s even better. I would not suggest 99% lean.
  • 2 tablespoon Dijon mustard
  • 1/2 tablespoon Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • whipped feta spread
  • to serve: brioche, buns, arugula, tomato, red tomato, etc

Instructions

whipped feta

  • To a food processor, add in feta cheese, 2 tbsp olive oil, Greek yogurt, minced garlic and lemon juice. Pulse until creamy and slowly add in 1-2 more tablespoons of extra-virgin olive oil if a creamier texture is desired. Feta spread can be made 1-2 days in advance and refrigerated.

Greek turkey burgers

  • Prepare your grill for direct heat and preheat to medium heat (approximately 350-450F). Alternatively, you can use a skillet or grill pan on the stovetop.
  • While the grill preheats, gently blend ground turkey, Dijon mustard, minced garlic, dried spices and a splash of Worcestershire sauce into a large mixing bowl.
  • Form each patty into a loose ball weighing approx 4-ounces press each patty down to a ¾-inch thickness, by about 4 ½-inches wide. If the turkey starts to stick to your hands, wet your hands with water.
  • On preheated grill over medium heat, place burgers 4 inches from heat source for 9-10 minutes per side (turning twice) and until fully cooked to 165 F.
  • Remove burgers from grill. Top each burger with whipped feta, and your favorite burger toppings!

Notes

if you're pressed for time and want to use pre-made turkey burger patties, they will still be delicious with whipped feta spread on top!
feel free to use ground chicken if needed. 90/10 suggested
