  • 4 bone-in pork chops
  • 1 teaspoon Kosher salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons avocado oil - divided
  • ¼ cup Pistachio Pesto - or any pesto


  • Rub pork chops (both sides) with avocado oil, salt and pepper. Cover and allow to sit at room temperature for 20 minutes.
  • Oil the grate of a grill and set to medium heat (can also use a grill pan indoors).
  • Add pork chops and grill for 20 minutes, flipping halfway through. Temperature should be 145°F -160°F degrees, depending on preference.
  • Remove from heat, and top with Pistachio Pesto.
