Did you think I’d share my Roasted Garlic Pistachio Pesto, and not have another recipe to pair it with? I wouldn’t leave you hanging like that frand. I love you (and pesto) too much to do that to you.
We ate a ton of pork chops growing up; they’re a great way to get protein on a budget [and my parents had six peeps to feed, so yes, a lot of pork was had] Plus, pork chops are so easy to make. This time of year, if I can avoid the oven, I’m all for it, so a lot of the time, we’ll grill on Sunday and have a side to go with said protein during the week. If you’re making these pork chops during the week, and you don’t want to pull out the entire grill, you can easily use a grill pan on the stove. You do you.
Since I’m on a new round of the whole 30, I always have homemade sauces on hand to add flavor to everything; like my Roasted Garlic Pistachio Pesto. It pairs really nicely with a platter of grilled pork chops. You could even slow-cook a pork tenderloin all day with this pesto. Oh! Or even sous vide a pork loin roast. Seriously, pork and pesto together have so much salty, fatty, healthy flavorrrrrr. Just do it.
Please feel free to use any pesto sauce you like. Obvi I’m going to suggest my dairy-free, super flavorful pesto with all the roasted garlic, but if you don’t want to, I won’t be mad at you. Any basil pesto will do. Any kale pesto will do. Any lemon pesto will…do. For real. Just get those fresh flavors together with grilled pork chops, and you’ll be in a literal hog heaven. Too far?
If you watched me yesterday on Facebook Live, I made these Pesto Grilled Pork Chops to prep the week. I did use a grill pan, because I was not about to sweat to death outside to grill for you. Not even a little sorry about it. But if you watched, you got the jest. Grill these pork chops, bake em’, slow-cook them. Just make them! I like to use bone-in center cut pork chops for added flavor (bone = flavah), but you can get boneless if you prefer.
Pair with a side of grilled veggies in a basket and then…I toss in pesto. Because, of course I did.
pesto grilled pork chops
Ingredients
- 4 bone-in pork chops
- 1 teaspoon Kosher salt
- 1 teaspoon ground black pepper
- 2 tablespoons avocado oil - divided
- ¼ cup Pistachio Pesto - or any pesto
Instructions
- Rub pork chops (both sides) with avocado oil, salt and pepper. Cover and allow to sit at room temperature for 20 minutes.
- Oil the grate of a grill and set to medium heat (can also use a grill pan indoors).
- Add pork chops and grill for 20 minutes, flipping halfway through. Temperature should be 145°F -160°F degrees, depending on preference.
- Remove from heat, and top with Pistachio Pesto.
