Walking Tacos

Walking tacos are a fun, hands-on meal perfect for game days, parties, or even camping. Filled with taco meat and your favorite toppings!

Ingredients

Taco Meat

  • 1 tbsp olive oil
  • 1/2 cup yellow onion, diced
  • 1 lb lean ground beef - or ground turkey or ground chicken
  • 1 15-ounce can black beans
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon black pepper
  • 8-10 1 or 2-oz snack-sized bags corn chips (Fritos), or Doritos - can also use protein chips or grain-free tortillas

Toppings

  • Dandy® Radish Ministicks
  • Dandy® Romaine lettuce, chopped - or iceberg
  • 1 cup Mexican-blend shredded cheese
  • sour cream
  • diced tomatoes
  • chopped cilantro
  • jalapeno - optional

Instructions

  • Heat olive oil in a medium skillet over medium-high heat. Add onion and sauté until translucent, about 5-7 minutes.
  • Add ground beef to the skillet, breaking up the meat with a spatula, until browned and cooked through. Drain and discard any excess liquid and grease.
  • Place skillet back on the stove and reduce heat to low. Add dried spices and canned black beans, and mix to combine and cook for 5 minutes, until fully heated through and simmering.
  • Assemble the walking tacos by opening the bags of chips and spooning in some of the cooked beef and bean mixture and your favorite taco toppings.
