When I worked in corporate, we used to have a cafeteria that had daily lunch specials and most Fridays they would serve walking taco bags; Doritos topped with taco meat and toppings and if I’m being honest I looked forward to it way more than I should have.

- 1 lb lean ground beef - or ground turkey or ground chicken
- 1 15-ounce can black beans
- 2 teaspoons chili powder
- 2 teaspoons cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon Kosher salt
- 1/2 teaspoon black pepper
- 8-10 1 or 2-oz snack-sized bags corn chips (Fritos), or Doritos - can also use protein chips or grain-free tortillas
Toppings

- Dandy® Romaine lettuce, chopped - or iceberg
- 1 cup Mexican-blend shredded cheese
- sour cream
- diced tomatoes

Instructions
- Heat olive oil in a medium skillet over medium-high heat. Add onion and sauté until translucent, about 5-7 minutes.
- Add ground beef to the skillet, breaking up the meat with a spatula, until browned and cooked through. Drain and discard any excess liquid and grease.
- Place skillet back on the stove and reduce heat to low. Add dried spices and canned black beans, and mix to combine and cook for 5 minutes, until fully heated through and simmering.
- Assemble the walking tacos by opening the bags of chips and spooning in some of the cooked beef and bean mixture and your favorite taco toppings.
