I like to take it one step further by adding white beans and chickpeas to make it a hearty dense bean salad that’s packed with fiber and protein to help keep you full longer.
Instead of the classic oil and vinegar dressing, I toss everything in a creamy mayo-based grinder dressing. It’s rich, tangy, and coats every bite, making this the kind of meal prep lunch I genuinely look forward to all week without getting bored.

This easy grinder salad recipe is a mashup of a classic Italian grinder sandwich and a dense bean salad. Adding two cans of beans makes it even more filling, stretches the recipe for several meals, and turns it into the perfect lunch prep or quick dinner.
For the grinder salad
- Romaine lettuce or iceberg: Romaine adds extra crunch, while iceberg gives this salad that classic deli-style texture. Either works well.
- Chickpeas (garbanzo beans): Adds fiber, protein, and a hearty bite that makes this salad more satisfying.
- Cannellini beans: Creamy white beans pair perfectly with the Italian flavors and help turn this into a true dense bean salad.
- Salami: I love peppered salami for extra flavor, but Genoa, hard salami, or your favorite deli salami all work.
- Oven-roasted deli turkey: Adds lean protein and balances the richness of the salami.
- Red bell pepper, cherry tomatoes, or roasted red peppers: Fresh bell pepper adds crunch, cherry tomatoes add sweetness, and jarred roasted red peppers bring a deeper, slightly smoky flavor. Use whichever you have on hand.
- Pepperoncini: Tangy, briny peppers are what give every bite that classic Italian grinder flavor.
- Parmesan cheese: Freshly grated Parmesan adds a salty, savory finish. Crumbled feta is also delicious if that’s what you have.

I love a little schmear of mayo on an Italian sub, so I turned those same flavors into a creamy grinder dressing. It’s tangy, flavorful, and coats every bite. If you prefer a lighter option, you can always swap it for my homemade red wine vinaigrette.
For the dressing, you’ll need:
- Mayonnaise: Creates the creamy base.
- Red wine vinegar: Adds the classic tangy Italian deli flavor.
- Pepperoncini brine: Don’t pour it out! The liquid adds acidity and a punch of flavor that’s hard to replicate.
- Fresh garlic: For bold, savory flavor.
- Italian seasoning: Brings together all those classic herb flavors.
- Kosher salt and black pepper: Season to taste and balance the dressing.
Can I Make This Vegetarian?

Absolutely! Skip the deli meat and add another can of chickpeas or cannellini beans for extra protein and fiber. Chopped marinated artichoke hearts, roasted red peppers, or even fresh mozzarella pearls are also delicious additions that keep all the bold Italian-inspired flavors while making this grinder salad completely meat-free.
Storage
This salad keeps really well, making it perfect for meal prep. Store leftovers in an airtight container in the refrigerator for up to 4 days. As the lettuce softens, the salad becomes even more flavorful. If it starts to look a little dry after chilling, simply stir in a splash of the leftover creamy grinder dressing to freshen it up before serving.

Ingredients
For the grinder salad:
- 1 romaine heart or small head of iceberg, chopped
- 1-15 oz can chickpeas, drained and rinsed - (garbanzo beans)
- 1-15 oz can white cannellini beans, drained and rinsed - or Northern white beans
- 6 oz. sliced salami, cut into thin strips - I like peppered salami but any salami will do
- 6 oz oven roasted deli turkey, chopped
- 1 fresh red bell pepper, diced - or 1 cup cherry tomatoes or 1 jarred roasted red pepper
- 1/3 cup sliced pepperoncini, chopped
- 1/4 cup grated parmesan cheese - omit if dairy-free
- ½ cup fresh basil, thinly sliced
- Creamy Grinder Dressing - or my red wine vinaigrette for a lighter option
For the creamy grinder dressing:
- 3/4 cup mayonnaise
- 1 tablespoon red wine vinegar
- 1/4 cup pepperoncini liquid from the jar
- 2 cloves garlic, minced
- 2 teaspoons dried Italian seasoning
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
Instructions
- Make the dressing: In a small bowl or mason jar, whisk together the mayonnaise, red wine vinegar, pepperoncini brine, minced garlic, Italian seasoning, kosher salt, and black pepper until smooth and creamy.
- To a large bowl, add the chopped romaine, chickpeas, cannellini beans, salami, turkey, bell pepper or roasted red peppers or cherry tomatoes, chopped pepperoncini, Parmesan cheese (if using), and fresh basil.
- Pour the creamy grinder dressing over the salad and toss until everything is evenly coated.
- Enjoy immediately, or refrigerate for 20–30 minutes to let the flavors meld before serving.
