You guys know my love of football food. And my love of Buffalo flavored anything. So when it was time to link-up with my fave Foodie Football Fans, I knew this time around I’d have to somehow pay homage to all things Buffalo-flavored. See my last recipe, Cuban Sandwich Quesadillas, here!
For whatever reason, when I first started working that office life, I always volunteered to bring a tray of deviled eggs to office shingdigs. I mean they’re pretty inexpensive, they feed the masses, and were potluck perfect. Plus, my mom always seems to make them for her own potlucks, so I think that’s where it all began for me.
These Buffalo Chicken Deviled Eggs are always a hit for tailgating! We actually just went to the Bucs game this past weekend, and I made a tray to bring to our friend’s tent. They were gone in no more than ten minutes.
We almost always have a batch of shredded chicken for the week, so 1/4 cup was easy to add in. But if you don’t have that on hand, a can of diced chicken, while not always the ‘cleanest’ of options, more than works for a proper tailgate dish. Sometimes I use mayo, sometimes Greek yogurt. If these are something we’re eating at home, I prob mix half, and half. If it’s for a bunch of boys (like this past weekend), I’ll use mayo. There isn’t a huge difference in taste, just calories/fat. Enjoy!
- 6 eggs, hard-boiled, cooled, peeled, and sliced in half
- 1/4 cup chicken, finely shredded or diced
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp mayonnaise Greek yogurt
- 1/4 cup Buffalo wing hot sauce (I like Frank’s Red)
- 2 tbsp blue cheese, crumbled – plus extra for garnish
- Salt and pepper, to taste
- From each egg, scoop the yolks, mash and mix with the mayo, hot sauce, chicken, spices, and blue cheese. Mix well. Add additional season, if needed.
- Place a tablespoon or so, of the mixture back into the holes left by the yolks in the eggs. Chill for 30 minutes, or more.
- Garnish with additional blue cheese, if desired.

Can I tell you that I’ve never tried a deviled egg?? I’m not a huge fan of hard-boiled eggs, but adding buffalo chicken, I am definitely willing to try it. Football food is m favorite, too!
