Grain-free tortillas pan fried until crisp, topped with marinated Pollo Asado Chicken make for quick and easy, flavorful tostadas!
Growing up, tostadas were always my favorite! I mean, don’t me wrong I also love tacos, but s a kid, tostadas made me feel like I was eating a giant nacho, which I also lurve. But really, how do you not love all three of these; a tostada, a taco or nachos? Give me any of them, and I won’t say no.
What is a tostada?
A quick Google search will tell you that a tostada is, “a Mexican deep-fried tortilla topped with a seasoned mixture of beans, ground meat, and vegetables.”, and it’s delicious AF.
You want a crisp tortilla for the base. Traditionally, a legit tostada will have a deep-fried corn tortilla.
Different parts of Mexico will use shredded meat over ground. From what I can tell, they all use refried beans, and I don’t hate it.
As a girl with no Mexican heritage whatsoever, I’ll tell you, I just want you to enjoy these however you like! And for you to make them in as little time as possible. Because, I love you.
I love corn tortillas myself, but for an easy weeknight dinner, I like to keep it clean when I cook at home (for the most part) and so I used grain-free tortillas (Siete brand) that I found at Sprouts. Please use any tortilla you like for this tostada recipe, the same cooking method will apply.
I love that I can get everyday staples along with more specialty items at Sprouts; for me it’s the best of both worlds! They have a lot of ‘cleaner’ items I can’t find at my local grocery, but they also usually have what I can find at my local grocery, so they save me a trip, which is nice. How to make this easy chicken tostada recipe
- Prepare Pollo Asado Chicken Thighs: cook according to package directions on back of package. Once done, allow to cool and transfer to a cutting board. Roughly chop using a chef’s knife, and set aside. The instructions call to grill and it couldn’t be easier. You can prep the Pollo Asado Chicken Thighs in advance for weekly meal prep or party prep!
- To a medium pan, heat refried beans according to directions.
- Prep toppings: dice tomatoes, chop cilantro, slice avocado and radish.
- To a medium skillet, use nonstick cooking spray and warm skillet on medium high heat. Add tortilla to skillet and cook, flipping every 2 minutes, until tortilla is crisp all over, 4 to 5 minutes total. Place each crispy tortilla on a plate, and set aside. Continue until all tortillas are crispy.
- To assemble, spread each tostada with refried beans and top with pollo asado, shredded lettuce, tomato, queso fresco, radish, cilantro and diced avocado.
How do you eat a tostada?
Honestly, just go all in for it! Pick it up and bite it. Messy? Maybe a little. But delicious and fresh tasting. No need to fork and knife these easy chicken tostadas.

Ingredients
- 1 package Pollo Asado Marinated Chicken Thighs - approx. 1.5lbs per package
- 1 16- ounce can refried pinto beans
- 2 cups shredded lettuce, romaine or iceberg
- 2 roma tomatoes, seeded and diced
- 1 cup queso fresco
- 1 bunch cilantro, chopped
- 2 avocado, pitted and sliced
- 2 small radishes, sliced thin, for garnish
- Nonstick cooking spray
- 8 tortilla shells of choice - Siete suggested, but any soft tortilla shell will do
