LEMON TAHINI DRESSING
Think of this dairy-free, whole30 compliant sauce as an all-purpose dressing, perfect for your favorite green salads or grain bowls, roasted vegetables or roasted meats. This dressing is nice and bright with fresh lemon and garlic, and a handful of dried herbs.
I love making this quick dressing to keep in the fridge all week long. You can make using just a whisk and mixing bowl, or a small blender (any blender will work for this recipe)
WHAT IS TAHINI?
I didn’t know what Tahini was for a long time, but it’s just sesame seeds that have been roasted. Sesame seeds that have been puréed until they are a smooth sauce or loose paste texture. Just like natural peanut butter, but made with sesame seeds instead. If your oil separates after opening, you can easily blend back together and store in a jar. This trick will work for any seed or nut butter.
Tahini – sometimes called Tahini Paste can be found in the grocery store near the other nut and seed butters, or near middle-eastern ingredients. Make sure to refrigerate your tahini after opening, and it will last forever in the fridge.
Because tahini is simply puréed sesame seeds, it makes for one perfect condiment to use for any lifestyle.
HOW TO MAKE LEMON TAHINI DRESSING
I’ve played with loads of dressings using tahini paste, and the recipe below is my favorite version with fresh lemon, loads of garlic (3-cloves) and dried spices. But feel free to follow my recipe as a base for your own if you like!
To make this easy tahini dressing, simply whisk to combine: 1/4 cup tahini paste, 1/4 cup water, fresh lemon juice, 3 minced garlic cloves, fresh or dried dill, dried onion powder, salt and pepper. Easy, clean, and done.
If you can’t find fresh lemon, it’s okay to use jarred lemon juice (please check the ingredients if on an elimination diet), and if you can’t find fresh dill or garlic, dried spice is fine as well.

Lemon Tahini Dressing
Ingredients
- 1/4 cup tahini
- 3 tablespoons fresh lemon juice
- 3 cloves garlic minced
- 1 tablespoon fresh or 1/2 tbsp dried dill
- 1 teaspoon onion powder
- 2 tablespoons water
- Salt and pepper - to taste
Instructions
- Combine all of the ingredients in a bowl and whisk until smooth. Season with salt and pepper, if desired - to taste.
- Serve immediately or refrigerate. The dressing will thicken in the fridge. To thin out, remove from fridge 20 minutes before you plan to use.
