How many times do you think you will hear, “Happy Fall, ya’ll!” from people this week (Fall begins Tuesday, 9/22/14, in case you didn’t know. You are welcome.)? I’ll be one of those people, because this time of year is truly one of my favorites!
It took me a long, long time to enjoy cauliflower. It’s lower in carbs, so I made myself start eating it years ago when I tried to do a low-carb diet. Since that time you can find like a gazillion different cauliflower recipes out there to convert just about anyone into a true fan.
This cauliflower dish is so comforting and a perfect in season vegetable; roast them, mash them, bake them (and then smother them in cheese. duh.) and pair this with a roast of some sort for the perfect Fall dish. Because this is now a casserole with chunks of cauliflower, you could even pair it was a salad, or maybe add ham when you bake it.
If I am being completely honest, when I made this dish, Jason was grilling steaks, and pork chops for the week (not very Fall-like in Florida, yet) and we ate this as a side to charcoal grilled pork chops, and it was perfection, you guys.
This sounds yummy! I’m big into cauliflower right now.
I think I am making this as a side for Thanksgiving this year. I love how creamy and cheesy it is.
So I made your Gouda Cauliflower Casserole recipe last night with dinner and all I have to say is O M G!!!! It was so freaking good, I know I could of finished it myself. I did how ever finish the left overs today for lunch! The only thing is, it had the weirdest smell to it…lol I will probably try a different gouda cheese next time or maybe do like cheddar. Also I never pre-cook my cauliflower I just mixed everything up in the casserole dish and cooked till it looked all bubbly and yummy!! I love cauliflower and this is hands down my favorite recipe! The ham reminds me of scalloped potatoes, and I think will bring this dish up a notch, for sure!

i’m pretty sure this would make a convert out of anyone. I haven’t tried cauliflower mashed “potatoes” yet, but they look so fluffy and good! Especially with gouda…that was a gouda decision! (har!)

I love cauliflower and make something like this but the cheese varies – never smoked gouda because I’m not a fan of smoked cheeses. Great dish!

Funny, I’m the opposite of you. I’ve always loved cauliflower (and broccoli) since forever and can snack on it with (or without!) dip. With that said, I knew I would love this casserole as soon as I heard it. Can’t wait to try it!
Ahh, broccoli also took me ages to like. I came around to it much sooner than cauli, though. My husband loves them raw, himself.

I love cauliflower, but my hubby is veg-averse…luckily, he’s trying to eat more for their health benefits. I think this would be a great “gateway recipe” for him. Must make soon!!
