How many times do you think you will hear, “Happy Fall, ya’ll!” from people this week (Fall begins Tuesday, 9/22/14, in case you didn’t know. You are welcome.)? I’ll be one of those people, because this time of year is truly one of my favorites!
So when the Sunday Supper crew announced today’s theme was all about Fall (ya’ll), I knew I’d have to participate. Mainly, because I have an awesome recipe to share, but also to remind myself to check out everyone else’s festive recipes for Fall [last year I shared a classic chili recipe]!
It took me a long, long time to enjoy cauliflower. It’s lower in carbs, so I made myself start eating it years ago when I tried to do a low-carb diet. Since that time [and because of Pinterest] you can find like a gazillion different cauliflower recipes out there to convert just about anyone into a true fan.
I have since learned to really love cauliflower. Do you know how I started to enjoy it? With faux mashed potatoes, but I like to think my grown up palette has changed and I swapped cheddar for smoked gouda. I also replaced the heavy cream, with cream cheese. Okay, so maybe my palette isn’t quite that refined after all. Whatev.
This cauliflower dish is so comforting and a perfect in season vegetable; roast them, mash them, bake them (and then smother them in cheese. duh.) and pair this with a roast of some sort for the perfect Fall dish. Because this is now a casserole with chunks of cauliflower, you could even pair it was a salad, or maybe add ham when you bake it.
If I am being completely honest, when I made this dish, Jason was grilling steaks, and pork chops for the week (not very Fall-like in Florida, yet) and we ate this as a side to charcoal grilled pork chops, and it was perfection, you guys.

Lane says
This sounds yummy! I’m big into cauliflower right now.
Nichole says
I think I am making this as a side for Thanksgiving this year. I love how creamy and cheesy it is.
Reese says
So I made your Gouda Cauliflower Casserole recipe last night with dinner and all I have to say is O M G!!!! It was so freaking good, I know I could of finished it myself. I did how ever finish the left overs today for lunch! The only thing is, it had the weirdest smell to it…lol I will probably try a different gouda cheese next time or maybe do like cheddar. Also I never pre-cook my cauliflower I just mixed everything up in the casserole dish and cooked till it looked all bubbly and yummy!! I love cauliflower and this is hands down my favorite recipe! Thank you so much for sharing!
Sarah says

I love, love, love cauliflower and look forward to trying this recipe. Your suggestion to add ham is a great one! I think I’ll try that too! Thanks for sharing, Nichole!
Nichole says
The ham reminds me of scalloped potatoes, and I think will bring this dish up a notch, for sure!
Julie @ Texan New Yorker says
This is so beautiful, I’m going to have to try it soon. I have never liked cauliflower, but this season I’m determined to make myself like it. I did that last year with broccoli, and it really did work. Thanks for posting!
Courtney @ Neighborfood says
i’m pretty sure this would make a convert out of anyone. I haven’t tried cauliflower mashed “potatoes” yet, but they look so fluffy and good! Especially with gouda…that was a gouda decision! (har!)
Nichole says
I see what you did there, Courtney. I love a good corny joke 😉
Amber says
This looks amazing and would make me very happy indeed.
Nichole says
Thanks, Amber!
Biana says

SMD @ Life According to Steph says
I love cauliflower and make something like this but the cheese varies – never smoked gouda because I’m not a fan of smoked cheeses. Great dish!
Lisa (Panning The Globe) says
This recipe looks so amazing! You’ve made cauliflower into cheesy comfort food. Yum!
Nichole says
Which is totally my kind of dish, Lisa 🙂
Liz says
I think your casserole could make the whole world fall in love with cauliflower!
Nichole says
Aww, thank you so much Liz! Seriously, what isn’t good with cheese?!
Carla says
Funny, I’m the opposite of you. I’ve always loved cauliflower (and broccoli) since forever and can snack on it with (or without!) dip. With that said, I knew I would love this casserole as soon as I heard it. Can’t wait to try it!
Nichole says
Ahh, broccoli also took me ages to like. I came around to it much sooner than cauli, though. My husband loves them raw, himself.
Shaina says
Seriously obsessed with the fact that you used smoked gouda in this recipe. LOVE!
Nichole says
And no meat, so totally up your alley 🙂
Christie says
OH MY! I need this now. What time’s dinner?
Nichole says
Hehe, come on down!

Nichole says
Is there any other way? 🙂
Wendy (The Weekend Gourmet) says
I love cauliflower, but my hubby is veg-averse…luckily, he’s trying to eat more for their health benefits. I think this would be a great “gateway recipe” for him. Must make soon!!
