Even though I’m starting to dream of fall, we’re in the thick of summer – esp in Florida, and a refreshing Pineapple Mojito that sparkles on top, thanks to a generous pour of Riondo Prosecco sounds like the perfect way to keep on celebrating summer, especially on a Friday!
This Sparkling Pineapple Mojito has a lot of the classic mojito recipe components; muddled mint, fresh lime juice, and a splash of rum, but shaking with fresh pineapple juice, and topping with a fizzy, bubbly prosecco elevates this cocktail to a whole new level of festive and fun.
And just because we’re adding a few extra ingredients (two) – this mojito cocktail will still be one of the easiest bevvys you’ll ever make. I promise you.

Instead of a simple syrup found in a classic mojito recipe, I like to add raw honey to my Sparkling Pineapple Mojito – there’s already a lot of natural sweetness from the fresh pineapple juice, and prosecco, so I personally don’t feel the need to make a simple syrup. But feel free to use if you like, friend. Either way, this Pineapple Mojito will be refreshing and perfect to sip all weekend long – enjoy!

Ingredients
- 5-6 mint leaves
- 1 ounce rum - can use light rum, pineapple rum, etc
- 1 teaspoon raw honey
- 3 ounces pineapple juice
- ice - to fill
- 1 bottle prosecco - to fill
- fresh pineapple - sliced, to garnish
- extra mint - to garnish
Instructions
- To a glass, add mint leaves, honey, and rum. Muddle them together (pound with a muddler or the handle of a wooden spoon) to allow mint flavor to release.
- Pour the pineapple juice over the muddled mixture. Stir well.
- Add ice to fill the glass.
- Pour Riondo Prosecco over the ice. Add a straw and sip!
