Fresh, flavorful, and filling! This salad is the perfect summer side, under 100 calories. Paleo, and Whole 30 compliant if cheese is omitted.
My favorite part of summer is chowing down on copious amounts of watermelon. I’m not even kidding – I love watermelon so much. I know everyone is already gearing up for fall, and I get it, but I’m not quite ready for pumpkins, caramel, and apples (oh my!). I don’t know if that’s because it’s HOTTER THAN HOT in Tampa, or because summer just feels like it went too fast.
I love summer get-togethers, foods, and summer cocktails, but yes I could definitely do without the heat. And really once, ‘fall’ hits here, it will cool slightly, but maybe only ten whopping degrees. Womp.
With Labor Day next week, I’m holding on to fresh summer recipes as long as I can. This Watermelon Salad with fresh mint, cool cucumber and feta cheese is incredibly refreshing, and a healthier side to balance out whatever else you’re planning to eat over Labor Day Weekend (I’m looking at your glorious burgers with all the toppings, and my mom’s mayo based potato salad).
This fresh salad is so easy to make, and tastes like summer. I mixed it with the juice of one fresh lime, and a little zest. I decided to add the lime after watching Farmhouse Rules on FN. Have you ever watched Nancy Fuller? I love her! I want to live on a farm, and cook for all the grandkids someday. She is my goal. Though I don’t know that I want to tend to an actual farm. Haha. Anyway, she made a fruit salad with a honey-lime dressing, and it sounded incredible. That is for sure next on my list to make!
I wanted to kind of pretty this salad up by zoodling the cucumber (is “zoodling” a word?), and used a melon baller for the watermelon chunks. It took no time at all, but if you’re not feeling it, just cube em’ both, and call it a day. The flavor will be the same no matter what.
This salad is a great side anytime – it will generously serve four (which is what the nutrition info is based off of), but as a small side to a plate at a summer shindig, it will easily stretch for six people. There’s no added sugar at all, so all the sweetness is natural! Holla.
If you’re eating Paleo, or doing a Whole 30, omit the cheese. I’ll never not want cheese, and the feta complements both the watermelon, and the cucumber, but it’s still just as delicious without the cheese; promise.

Ingredients
- 2 large cucumbers, spiralized, or cubed into ½-inch pieces
- 3 cups watermelon, balled or cubed into ½-inch pieces
- ⅓ cup feta cheese, crumbled
- ¼ cup fresh mint leaves, sliced thin
- Juice of 1 fresh lime
Instructions
- To a large serving bowl, place cucumber noodles (or cubes), watermelon, feta cheese, and sliced mint. Toss to combine.
- Squeeze fresh lime juice over the salad. Serve immediately.
