I’m never one to skip breakfast, and if I do for whatever reason, I’m one hangry chick, that you probably don’t want to be around. Jason knows Hangry Nikki all too well. That being said, breakfast is probably my least thought out meal of the day.

I tend to prep egg cups, or make a quick avocado toast, and scarf it while logging on to the computer in the morning. If it’s a travel day for work, I’ll usually whip up a quick smoothie and drink it in the car. It’s not the most exciting of times, but it gets the job done.
That being said, I am trying to find the balance in my life. I am always working two full-time jobs; three when I have an event to coordinate, and I shared the other day, how this ride to crazy has to slow itself down. I’m stretched too thin and it’s time for me to find a little bit of myself again.
On the days when I am working from home (2-3 days/week), I have started making myself get up an extra half hour early. In those extra thirty minutes, I’m making smoothie bowls with toppings, and prioritizing my day. I used to think making a list of your day sounded incredibly depressing, but at the ripe old age of thirty-three, it actually calms me.
Do you enjoy smoothie bowls? I used to think they were kind of silly, to be honest. But you can’t slurp a bowl of smoothie or you’ll get it everywhere (or is that just me?). Smoothie Bowls allow me to be present in the morning, which is kind of nice. I like to make mine with 1/2 cup of Stonyfield Organic Whole Milk Greek yogurt. I use the whole milk for healthy fats, and protein. But you can use any Greek yogurt you like. I like to add thick Greek yogurt to help my bowl hold its own with toppings. Sometimes I freeze ahead fresh berries and 1/2 a banana. Other times, I buy frozen. For this recipe, I used a pre-frozen mixed berries, and topped with fresh fruit. I like to use frozen berries, so that I don’t need ice too.
- 1 heaping cup frozen mixed berries
- ½ small ripe banana, sliced and frozen
- ¼ cup almond milk (any milk will do!)
- ½ cup Stonyfield Organic Whole Milk Yogurt (or any other Greek yogurt variety)
- ½ banana, sliced
- 1-2 tbsp fresh mixed berries
- 1 tbsp shredded unsweetened coconut
- 1 tbsp chia seeds
- 1 tbsp granola
- To a blender, add all smoothie ingredients and pulse until smooth.
- Pour smoothie into bowl, and top with desired ingredients (feel free to stray from my topping suggestions, and use what you like!)
