This skillet sweet potato hash made with fresh apples and crispy bacon make for one filling breakfast to start your day off right. It’s also perfect for a weekend brunch!
Before this hash recipe I didn’t even know I like sweet potatoes, if we’re being honest. After my first whole30 in 2014, this Sweet Potato Hash with Apples and Bacon became my go-to breakfast for pretty much six months.
But what’s not to love? Soft, but crispy sweet potato with fresh apples and savory, fatty (um, hi flavor), crispy bacon with an egg or two with all that yolk. I die. It’s so good!
This is one of those one skillet breakfasts that I love on a lazy Sunday morning or with friends for brunch. It’s also an easy recipe to double up and have for the week for breakfast prep!
This Sweet Potato Hash with Apples and Bacon is so comforting and flavorful, with a hint of cinnamon, and savory thyme with sage. Plus, bacon. Bacon makes everything better, right?
How to make Sweet Potato Hash with Apples and Bacon
- In a medium skillet over medium heat, cook diced bacon 3-5 minutes, until crispy. Remove bacon, but leave fat in pan.
- Add diced onion, chopped apples, and cinnamon. Cook until soft, about 5-7 minutes. Once soft, remove from pan and add to reserved bacon. Set aside.
- Add coconut oil or ghee to pan. Once melted, add sweet potatoes and cook for 2 minutes. Stir, and cook 2 more minutes.
- Continue cooking sweet potatoes, stirring as needed, allowing all sides to brown and not burn, until soft, about 5-6 more minutes (about 10 minutes total)
- Add reserved bacon, onion, and apples back to pan. Add sage and thyme, stir to combine and warm throughout.
This hash calls for fresh herbs like thyme and sage, but if you have dried on hand, that will also work. In fact, while I LOVE fresh sprigs of thyme, I was out when making this recipe to photograph and used dried thyme from the spice cabinet and the flavor is just the same.
If you’re in a hurry, while the sweet potatoes are softening in the skillet, you can start making eggs and/or coffee. I’m a big fan of multi prep so that as soon as my meal is done cooking, I can dig right in.
What to serve with Sweet Potato Hash with Apples and Bacon
My personal favorite is 1-2 over easy, runny eggs so that I can mix that delicious yolk drool into this hash recipe and taste it with each bite! My husband detests a runny egg, and usually makes over hard or a softly scrambled egg for his plate of sweet potato hash.
This hash is filling on its own, so if you don’t want eggs, omitting them is more than okay! I also love a generous dash of hot sauce (Frank’s RedHot is my favorite).
If you want a little cheese (not on whole30), then I say go for it! You do you.

This is my go-to breakfast now, Whole30 or otherwise. Although I did discover it during my first Whole30. So so good! You should also try shredding the potatoes with onions to make sweet potato latkes and then eating those with a runny egg. You’re welcome! 😉
