I’ve teamed up with Super Starr Papaya to share today’s recipe. Their papaya has a super sweet flavor, available all year round making it the perfect fruit to layer into these chia seed breakfast parfaits!
I’m obsessed with grab-and-go breakfasts that can double as a snack – I like options, and this chia seed parfait checks every box. It starts with a creamy, protein-packed Greek yogurt base, layered with a thick, satisfying chia pudding, sweet fresh papaya, and a sprinkle of granola for crunch and a little fun.
This one is kind of a mash-up between my winter fruit parfaits and my jammy chia seed parfaits; basically the best of both worlds. You get those layered, cozy parfait vibes with the added texture and staying power of chia pudding. And since Super Starr Papaya is available year-round, it’s the perfect fresh, juicy layer to keep things bright and a little unexpected.
The chia pudding comes together the night before (hello, easy meal prep), so in the morning all you have to do is layer, grab, and go. Simple, flexible, and honestly…kind of perfect.

This recipe makes enough for 2-full breakfast parfaits, or you can divide it into smaller jars for 4-snacky portions: perfect for that 3pm “I need something” moment.
For the chia pudding layer:
- chia seeds (1/4 cup): the star of the show. They soak up the liquid and turn into that thick, pudding-like texture while adding fiber that actually keeps you full.
- almond milk: keeps things light and lets the other flavors shine. You can absolutely swap in oat milk or coconut milk depending on what you have (or the vibe you want).
- honey or maple syrup (optional): just a touch of sweetness to balance the chia. Totally optional, especially if your fruit and granola bring enough sweetness on their own.
For the parfait layers:
- plain Greek yogurt: creamy, tangy, and packed with protein, this is what makes the parfait feel like an actual breakfast, not just a snack.
- Super Starr Papaya: sweet, juicy, and a little unexpected. It adds freshness and a tropical vibe that pairs so well with the creamy layers.
- granola: for crunch, texture, and a little fun. Use your favorite; something slightly sweet and crunchy really brings it all together.

You can! Swap the Greek yogurt for your favorite dairy-free yogurt (like coconut or almond-based). Just note it may be a little less protein-packed depending on the brand.

Can I make this parfait ahead of time?
Yes! The chia pudding is actually best when made ahead and chilled overnight. You can also fully assemble the parfaits and store them in the fridge for up to 2–3 days. If you’re prepping ahead, add the granola just before serving so it stays crunchy.
How long does chia pudding last in the fridge?
Chia pudding will keep well in an airtight container in the fridge for up to 4–5 days, making it perfect for meal prep and easy grab-and-go breakfasts throughout the week.

Ingredients
- 1/4 cup chia seeds
- 1 cup almond milk, unsweetened - can also use oat milk or coconut milk
- 1 1/2 tablespoons honey or maple syrup - optional
- 1 cup plain Greek yogurt
- 1/2 Super Starr Papaya, cubed
- 3/4 cup granola of choice
Instructions
- Make the chia seed pudding: To a bowl or large mason jar, add chia seeds, almond milk and honey. Stir well to combine. Cover and refrigerate 2 hours, up to overnight until the chia seeds have absorbed all of the liquid.
- Assemble the parfaits: layer a glass or jar with 1/2 of the prepared chia seed pudding, 1/4 cup Greek yogurt, granola, 1/4 serving of the cubed papaya. Then add one more layer of Greek yogurt, and top with granola and papaya. Repeat for second parfait.
