It took me many years to enjoy broccoli. I was a child about it well into my twenties – but after learning how to roast broccoli in the oven instead of steaming or sautéing and I’ve never looked back.
This easy baked broccoli is the perfect side to any dinner – I love pairing it with my everything bagel salmon, whole chicken made in the instant pot, or air fryer chicken parmesan.
This broccoli is also really tasty in a grain or veggie bowl, drizzled with lemon-tahini dressing.

You only need four ingredients to broccoli roasted in the oven, that’ll change the way you think about broccoli as a side dish.
- broccoli florets: the star of the show.
- ghee or butter: this will add flavor and lead to crispy, but soft broccoli bits.
- spices: garlic powder, salt and pepper.
- lemon juice: to help enhance the flavor at the end. SO good.
If you’re vegan or can’t have dairy: use avocado oil or coconut oil over olive oil – both coconut oil and avocado have high smoke points and cook well on high temperatures.

The trick to achieving crispy, flavorful roasted broccoli is to roast on high heat and let it do its thing. You’ll want to roast this broccoli for 20ish minutes (10 minutes per side) at 400 degrees F.
- Trim broccoli florets from stem. Alternatively you can buy broccoli florets already chopped and clean. These are a great time saver if you need.
- Add broccoli florets to baking sheet. Drizzle with melted butter or oil and season with garlic powder, salt and pepper. Toss to combine.
- Roast for 10 minutes, then flip. Rotate the pan 180 degrees and continue baking for 10 more minutes, until florets are tender and the tips of the florets are turning dark and crispy.
- Toss in lemon juice. Optional but enhances all the flavors. Serve and enjoy.
How do I get broccoli crispy when roasting?
To get crispy roasted broccoli, make sure your florets are dry before roasting, use enough oil to lightly coat each piece, and spread them out on the baking sheet without overcrowding.
This will allow enough dry space to steam and roast in the oven achieving crispy, soft bites of broccoli.
Can I use frozen broccoli for this recipe?
Yes, you can use frozen broccoli, but it won’t get quite as crispy as fresh – however, it’s still deliscious. Roast directly from frozen and add a couple of extra minutes to the cooking time, flipping halfway through.

This is my go-to recipe for roasting broccoli and flavor-wise, it’s incredibly versatile, so feel free to get creative with different seasoning combinations beyond this basic lemon, salt and pepper!
- Parmesan Cheese: I love topping roasted broccoli with salty, nutty Parmesan cheese or sharp cheddar cheese. I would suggest following the cook times below in the recipe card and tossing in cheese once removed from the oven.
- Spicy: Crushed pepper flakes are a great way to add some spice! Sprinkle a small amount onto the roasted broccoli after it has finished cooking and toss.

storage tips
- To Store. Refrigerate oven broccoli leftovers in an airtight storage container in the refrigerator for up to 4 days.
- To Reheat. To maintain some of the crispiness, reheat in the oven at 375 degrees F for 5-7 minutes or in an air fryer. Avoid microwaving, as it can make the broccoli mushy.
