Pear Gin Fizz Cocktail

It’s got all the same components of a basic gin fizz, but with a pear-infused simple syrup and an optional-but-worth-it, cinnamon + sugar rim! This cocktail is the perfect seasonal drink.
Pear-Infused Simple Syrup
For as much as I say I don’t use a lot of sugar in my recipes, there’s just something fun to me about taking a basic simple syrup and tailoring it to a cocktail (like this celery simple syrup).
Plus, it can be made in advance, so if you’re playing bartender for company or just yourself, this simple syrup can hang out in the fridge until you’re ready to sip.
You could easily use raw honey instead, but since you need about 1/2 cup’s worth, cane sugar is a lot more cost effective for this gin fizz drink, and you only need a generous teaspoon or so, it’s worth the extra sugar.
Plus, pears! Muddled pears simmered with cinnamon, sugar and water that infuse for a few hours before they’re strained and stored. Stir into your typical gin fizz bevvy and you’re good to go.
This pear simple syrup is good for more than just gin fizzes:
- Gin and Tonic: think classic gin and tonic but add this syrup for some seasonal sweet.
- Classic Martini: shaken, not stirred!
- Bourbon Smash: SO cozy for the fall or by a fire.
Basically, any cocktail that’s straightforward without too many other flavors would taste like autumn or the holidays with a splash of pear simple syrup.
what makes this gin fizz…fizz
Traditionally, an egg white that is shaken vigorously is what brings that extra froth and effervescent fizz to the gin fizz.
An authentic gin fizz should include it, and I’ve enjoyed several this way when ordering out, but at home, I forgo it. Mainly because I don’t want to waste an egg white. And also, because if I’m playing bartender at home, I don’t want to dole out several egg whites each time I make this. That being said, you do you.
The “fizz” in this homemade Pear Gin Fizz is simply sparkling water. I suggest a lemon flavor to compliment the pears and cinnamon. Any brand of fizzy sparkling lemon-flavored water will do for this cocktail.
how to garnish this drink
If you want to keep it simple and classic, this gin cocktail doesn’t need a garnish.
But it’s the right season (in my opinion) for tasty, pretty garnishes that take this cocktail from tasty to TASTY!
I suggest mixing equal parts sugar and cinnamon to line the rim of your cocktail glass for a warm and cozy taste. I also add a slice of pear, a sprig of fresh thyme and a little star anise. Sip and enjoy!

Pear Gin Fizz Cocktail
Ingredients
Pear Simple Syrup
- 1/2 cup water
- 1/2 cup sugar
- 1 pear, cored and cut into pieces
- 2 star anise
- 1 tablespoon cinnamon - or 2 cinnamon sticks
Pear Gin Fizz
- 1 tsp white sugar, for rim - optional
- 1 tsp cinnamon, for rim - optional
- crushed ice
- 2 ounces gin
- 1 1/4 ounce fresh lemon juice
- 1 teaspoon Pear Simple Syrup - plus more to taste
- 2 ounces lemon-flavored sparkling water
- star anise, sliced pear, sprig of thyme, for garnish
Instructions
Pear Simple Syrup
- In a small saucepan, heat water, sugar, chopped pear, star anise and cinnamon over medium-high heat. Bring mixture to a boil and stir until the sugar dissolves.
- Remove from heat, cover and steep for 30 minutes. Remove pear and star anise and strain cinnamon (optional step to strain) and store in the refrigerator until ready to use. Can be made ahead of time.
Pear Gin Fizz
- In a shallow bowl or larger ramekin, combine sugar and cinnamon. Wet the rim of a cocktail glass with water then dip in cinnamon sugar mixture.
- Fill a cocktail shaker with ice. Add gin, lemon juice, and Pear Simple Syrup (recipe above) to cocktail shaker. Replace lid and shake for 15 seconds or until shaker is cold (will be frosty). Strain into a glass. Top with lemon-flavored sparkling water and garnish with star anise, pears and thyme, if desired.
