An Italian classic, full of fresh flavors, with smooth and creamy burrata cheese. Perfect with sliced crostini toast points!
Today’s #SundaySupper theme is all things Italian. My own Italian momma always makes sure we have lots to eat anytime we’re together. She will always ask if you’ve had enough. I feel like I have a lot of my mom’s traits in that regard. I love feeding people! Nothing makes me happier than loving you with a good meal.
When I normally think of an Italian meal, I think of lasagna, or a good sauce that cooks all day; with a side of crusty bread (#duh). Those dishes hold really fond memories for me, growing up.
But the older I get, the more I crave simple dishes. The better the ingredients, the less a good meal really needs, in my opinion.
I’m obsessed with burrata lately – mozzarella made with cream. It is heavenly, you guys. My sister and I were at a restaurant recently, and ordered a Tomato Caprese with Burrata to start. It was so simple, and had so much flavor in its simplicity! I knew for today’s link-up, I had to re-create this dish in my own kitchen. It did not disappoint!

Ingredients
- 1/2 pint cherry or grape tomatoes, halved
- 1/4 cup red onion, diced
- 2 tablespoons fresh basil, torn
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 ball fresh burrata - usually comes as a 4oz ball
- salt and pepper, to taste
Instructions
- To a medium sized bowl, mix tomatoes, onion, fresh basil, olive oil, salt and pepper. Refrigerate 1 hour for flavors to marry.
- When ready to serve, place burrata in center of serving dish. Plate caprese mix around burrata. Drizzle balsamic over plate. Serve immediately.
