Two refreshing twists on this classic mojito recipe; shake with fresh pineapple juice, and top with sparkling, bubbly prosecco for an elevated cocktail – cheers!

Even though I’m starting to dream of fall, we’re in the thick of summer – esp in Florida, and a refreshing Pineapple Mojito that sparkles on top, thanks to a generous pour of Riondo Prosecco sounds like the perfect way to keep on celebrating summer, especially on a Friday!
This Sparkling Pineapple Mojito has a lot of the classic mojito recipe components; muddled mint, fresh lime juice, and a splash of rum, but shaking with fresh pineapple juice, and topping with a fizzy, bubbly prosecco elevates this cocktail to a whole new level of festive and fun.
And just because we’re adding a few extra ingredients (two) – this mojito cocktail will still be one of the easiest bevvys you’ll ever make. I promise you.
This recipe is sponsored by Riondo Prosecco, an authentic Italian sparkling wine from Italy, but I only work with brands I love, and I was especially excited to work with Riondo for today’s mojito recipe because they are the official Prosecco of National Prosecco Day! How could this Sparkling Pineapple Mojito not include Riondo Prosecco? Plus, I like their new twist-off cap versus a cork (that I’m always afraid will shoot off, deep into my house breaking something as I attempt to open a bottle of bubbly). Though if you love the traditional string and cork enclosure on your bottle of prosecco, they’ve got you covered with either option!
Their vino frizzante boasts fresh aromas of Golden Delicious apple, pear, and acacia blossom. Its fizzy bubbles are followed by a crisp, clean finish. While delicate and fruity, making it a great addition for a tropical cocktail, this prosecco is the perfect choice to either sip by itself or mix to make Riondo Prosecco Cocktails. You do you.
Instead of a simple syrup found in a classic mojito recipe, I like to add raw honey to my Sparkling Pineapple Mojito – there’s already a lot of natural sweetness from the fresh pineapple juice, and prosecco, so I personally don’t feel the need to make a simple syrup. But feel free to use if you like, friend. Either way, this Pineapple Mojito will be refreshing and perfect to sip all weekend long – enjoy!
